- 3 lb. chicken (whole)
- 1/2 c. flour
- 2 tsp. salt
- 6 Tbsp. butter
- 6 medium size potatoes
- 6 small onions
- 6 large carrots
- 2 large green peppers
- 1 Tbsp. sugar
- 1/4 tsp. pepper
- 2 1/2 c. stewed tomatoes
Directions

1Mix 1/2 teaspoon salt with flour and roll chicken in mixture. Melt butter in frying pan and brown the chicken on all sides at high heat.

2Peel potatoes and onions.

3Scrape and quarter carrots lengthwise.

4Slice peppers in 1/2-inch strips.

5Mix remaining salt, sugar and pepper with tomatoes.

6Place 2/3 of vegetables in bottom of large pan.

7Place chicken on top and add remaining vegetables.

8Pour tomatoes and 3 cups boiling water over all. Cover tightly and bring to a boil.

9Reduce heat and let simmer until tender, approximately 1 1/2 hours.
