- 2 Tbsp. butter or margarine
- 3 to 3 1/2 lb. fryer chicken, cut up
- 1 c. sliced onions
- 2 cloves garlic, crushed
- 2 Tbsp. flour
- 1 (1 lb.) can tomatoes, undrained
- 2 tsp. dried thyme
- 2 tsp. chopped parsley
- 2 bay leaves
- 1 1/2 tsp. salt
- 1/4 tsp. hot Tabasco sauce
- 3 c. chopped green peppers
Directions

1In hot butter, in large skillet, saute chicken until golden brown.

2Remove pieces as they brown.

3Add onion and garlic to drippings and saute until soft (approximately 5 minutes).

4Blend in flour until smooth.

5Remove from heat.
