  • 2 c. cooked, chopped chicken
  • 3/4 c. thick white sauce
  • 1/2 tsp. salt
  • 1 tsp. lemon juice
  • 1 egg yolk, well beaten
  • 1/4 tsp. celery salt
  • 1 egg, slightly beaten
  • 1/2 c. bread crumbs
  • 2 Tbsp. cold water

Directions

    Combine chicken, white sauce, egg yolk, lemon juice and seasonings.

    Cool. Form in cones, cylinders or balls.

    Roll in crumbs. Dip in egg, diluted with water. Roll in crumbs again. Fry in deep fat at 385° about 2 minutes.

    Drain on paper towel. Serves 8.
