  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 1 c. milk
  • 1 1/2 c. chopped, cooked chicken
  • 1 small onion, chopped
  • salt and pepper to taste
  • celery salt to taste
  • 1 egg, beaten
  • fine bread crumbs
  • vegetable oil

Directions

    Melt the margarine (a double boiler works best) and blend in the flour.

    Slowly add the milk; cook, stirring constantly, until thick and smooth.

    Add the next 4 ingredients; mix well and chill. When it's cool enough to hold its shape, shape it into patties. Dip patties into the egg and then into the bread crumbs.

    Fry in hot oil until golden brown.
