Chicken Croquettes

Ingredients

  • 1 small onion
  • 1/4 c. butter
  • 1/3 c. flour
  • 1 c. milk
  • 1 1/2 c. cooked chicken
  • 1/2 tsp. salt
  • 1 1/3 c. bread crumbs
  • 1 egg
  • 2 Tbsp. water
  • oil (for deep frying)

Directions

    Chop onion; saute onion in butter.

    Add flour and milk; stir constantly until thickened.

    Remove from heat; add chopped chicken.

    Chill 2 hours.

    Beat water and egg in bowl.

    Divide chicken mixture into 8 equal portions.

    Shape into croquettes. Roll each one in crumbs.

    Coat with egg mixture and roll in crumbs again.

    Refrigerate 2 hours.

    Deep fry in 375° oil until deep golden brown, about 2 or 3 minutes; drain on paper towels and serve with warm sauce.
