Chicken Croquettes

- 1 small onion
- 1/4 c. butter
- 1/3 c. flour
- 1 c. milk
- 1 1/2 c. cooked chicken
- 1/2 tsp. salt
- 1 1/3 c. bread crumbs
- 1 egg
- 2 Tbsp. water
- oil (for deep frying)
Directions

1Chop onion; saute onion in butter.

2Add flour and milk; stir constantly until thickened.

3Remove from heat; add chopped chicken.

4Chill 2 hours.

5Beat water and egg in bowl.

6Divide chicken mixture into 8 equal portions.

7Shape into croquettes. Roll each one in crumbs.

8Coat with egg mixture and roll in crumbs again.

9Refrigerate 2 hours.

10Deep fry in 375° oil until deep golden brown, about 2 or 3 minutes; drain on paper towels and serve with warm sauce.

11Fresh mushroom sauce is a good choice.
