- 1 Tbsp. butter
- 1 c. finely chopped, pared apple
- 1 c. sliced celery
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 2 Tbsp. cornstarch
- 2 to 3 tsp. curry powder
- 3/4 tsp. salt
- 3/4 c. cold chicken broth
- 2 c. milk
- 2 c. diced, cooked chicken
- 1 (3 oz.) can sliced mushrooms, drained
- hot, cooked rice

Directions

1In saucepan, melt butter.

2Add apple, celery, onion and garlic.

3Cook until the onion is tender.

4Combine cornstarch, curry, salt and broth.

5Stir into onion mixture.

6Add milk.

7Cook and stir until mixture thickens and bubbles.

8Stir in chicken and mushrooms.

9Heat through.

10Serve over hot, cooked rice and pass curry condiments.
