- 5 Tbsp. butter
- 5 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. water
- 1 can cream of chicken soup
- 2 c. cooked, diced chicken
- cracker crumbs
Directions

1Melt butter.

2Add flour, salt and pepper.

3Blend.

4Add chicken soup, then cook until thick.

5Add chicken.

6Spread in shallow pan and chill until stiff.

7Cut into cutlets with biscuit cutter. Roll in crumbs, then beaten egg then crumbs again.

8Fry in deep fat about 1 1/2 inches deep until brown.

9Drain on absorbent paper.
