Ingredients

  • 1/4 c. butter
  • 1/4 c. sifted flour
  • 1 c. chicken broth
  • 1 c. milk
  • 3/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1/8 tsp. nutmeg
  • 1/4 c. plus 2 Tbsp. grated Parmesan cheese
  • 3 Tbsp. dry sherry
  • 1 (2 lb.) head broccoli, trimmed and steamed until tender
  • 10 to 12 slices cooked chicken (or 6 poached chicken breasts)
  • 1/2 c. heavy cream

    Preheat oven to 350°.

    Melt butter in saucepan over medium heat; blend in flour, slowly add broth and milk and heat, stirring until thickened.

    Mix in salt, pepper, nutmeg, 1/4 cup cheese and sherry.

    Arrange broccoli in single layer in buttered 2-quart au gratin or shallow casserole and sprinkle with remaining 2 tablespoons cheese.

    Top with chicken slices.

    Beat cream until soft peaks form and fold in sauce; pour over chicken.

    Bake uncovered 1/2 hour until bubbly.

    Broil quickly to brown and serve.
