- 1 hen (5 or 6 lb.)
- 1 1/2 c. corn meal, scalded and baked
- 1 1/2 c. sour milk corn bread
- 1 box Croutettes
- 1 or 2 cans chicken noodle soup
- 1 1/2 c. chopped onions
- 1 c. chopped bell peppers
- 1 c. chopped celery
- 2 Tbsp. sage
- 1 Tbsp. black pepper
- 6 slices bread
- 1 Tbsp. salt
- 8 eggs
Directions

1Cook hen tender with plenty of broth.

2Slip meat off bones. Put Croutettes in large bowl.

3Add all other ingredients and soften with broth.

4Stir together until there are no lumps.

5Add 8 eggs and mix well.

6Put in pan and add chicken.

7Pour broth over until well soaked.

8Bake at 400° until done, but not dry.

9Serve with giblet gravy.
