Chicken Egg Rolls

- 3 cups chicken (cooked, boned, shredded)
- 1/4 cup diced green onion
- 1/4 cup diced celery
- 1/4 cup diced bell pepper
- 2 tablespoons oil
- 1/4 cup soy sauce
- 1 can diced water chestnuts
- 1 package egg roll wraps
Directions

1Pour oil in wok, set on high.

2Add celery, onions, and peppers and cook stirring constantly till slightly soft, (about 3 minutes).

3Add water chestnuts, chicken, soy sauce and broth. Cook on medium high until most of the liquid is absorbed.

4Stir often. Turn mixture on low and begin making egg rolls.

5Look on back of egg roll package on how to roll them up.

6Fry the egg rolls in hot oil in a fry cooker or skillet.

7Place on paper towel to drain oil.

8Serve immediately.

9Should make 15 egg rolls.
