Chicken Egg Rolls

Ingredients

  • 3 cups chicken (cooked, boned, shredded)
  • 1/4 cup diced green onion
  • 1/4 cup diced celery
  • 1/4 cup diced bell pepper
  • 2 tablespoons oil
  • 1/4 cup soy sauce
  • 1 can diced water chestnuts
  • 1 package egg roll wraps

Directions

    Pour oil in wok, set on high.

    Add celery, onions, and peppers and cook stirring constantly till slightly soft, (about 3 minutes).

    Add water chestnuts, chicken, soy sauce and broth. Cook on medium high until most of the liquid is absorbed.

    Stir often. Turn mixture on low and begin making egg rolls.

    Look on back of egg roll package on how to roll them up.

    Fry the egg rolls in hot oil in a fry cooker or skillet.

    Place on paper towel to drain oil.

    Serve immediately.

    Should make 15 egg rolls.
