  • 1 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 Tbsp. margarine
  • 2 c. chopped, cooked chicken, diced
  • 1 (4 oz.) can green chili peppers, rinsed and chopped
  • 3 Tbsp. butter or margarine
  • 1/4 c. flour
  • 1 tsp. ground coriander (optional)
  • 3/4 tsp. salt
  • 2 1/2 c. chicken broth
  • 1 c. sour cream
  • 1 1/2 c. shredded Monterey jack cheese (6 oz.)
  • 12 (6-inch) tortillas

    In a large saucepan, cook onion and green pepper in 2 tablespoons of margarine until tender.

    Combine onion in a bowl with chicken and green chili peppers.
