- 1 lb. chicken cutlets (veal or turkey)
- 1/2 c. flour
- 2 eggs
- 2 tsp. grated Parmesan cheese
- 1 chicken bouillon cube
- 2 Tbsp. margarine
- 1/2 c. sherry
- 2 Tbsp. cooking oil
- 2 Tbsp. lemon juice
- 1/4 c. water
Directions

1In shallow bowl, beat eggs and cheese; set aside.

2Coat chicken in flour and dip in egg mixture.

3Heat oil in skillet. Brown chicken slowly on both sides and remove to paper towel. Drain any oil from pan.

4To the pan, add margarine, bouillon cube and water.

5Add chicken pieces, sprinkle with lemon juice and pour on the sherry.

6Simmer 10 minutes or until tender, turning chicken occasionally.
