- 2 eggs
- 1/2 tsp. salt
- 5 Tbsp. peanut oil
- 1 c. chopped green onions
- 4 c. cold, cooked rice
- 2 Tbsp. chicken broth
- 3 Tbsp. soy sauce
- 2 Tbsp. sesame oil
- 2 to 4 chicken breasts (pre-fried)
Directions

1Beat eggs with 1/4 teaspoon salt and fry in 2 tablespoons hot oil.

2Cook until dry and separated.

3Remove eggs.

4Heat 3 tablespoons oil.

5Add green onions, then rice.

6Stir-fry 5 minutes and then add chicken broth and soy sauce.

7Add eggs and chicken strips (pre-fried).

8Heat together, stirring occasionally, on medium heat.

9Serves 4 to 6.
