- 1 c. diced, cooked chicken
- 2 Tbsp. soy sauce
- 1 c. uncooked long grain rice
- 1/4 c. canola oil
- 2 1/2 c. chicken broth
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. thinly sliced celery
- 1 c. lightly steamed broccoli flowerets
Directions

1Combine chicken and soy sauce; let stand 15 minutes.

2Heat oil over medium heat; add rice and cook until golden brown, stirring frequently.

3Add chicken and broth; reduce heat and simmer, covered, for 20 to 25 minutes, or until rice is tender.

4Remove cover; stir in onion, green pepper, celery and broccoli.

5Cook until liquid is absorbed.

6Serve immediately with extra soy sauce.
