- 1 Tbsp. corn oil
- 1/2 c. carrots, grated
- 1 c. chicken, cooked and chopped
- 2 eggs, lightly beaten
- 1/2 tsp. pepper
- 3 c. cooked brown rice
- 3 Tbsp. lite soy sauce
- 2/3 c. scallions, sliced
Directions

1In wok or skillet, heat oil over medium heat.

2Add carrots and chicken. Stir fry for 1 minute.

3Add eggs and pepper.

4Stir fry for 1 minute.

5Add rice and soy sauce.

6Stir fry for 5 minutes. Garnish with scallions.
