- 1 c. diced, cooked chicken
- 1 Tbsp. soy sauce
- 1 c. uncooked long-grain rice
- 1/3 c. salad oil
- 2 1/2 c. chicken broth
- 1/2 c. coarsely chopped onion
- 1/2 tsp. salt
- 1/4 c. finely chopped green pepper
- 1/4 c. thinly sliced celery
- 2 slightly beaten eggs
- 1 c. finely shredded lettuce or Chinese cabbage
Directions

1Combine chicken, soy sauce and 1/2 teaspoon salt.

2Let stand 15 minutes.

3Cook rice in hot oil in skillet over medium heat until golden brown; stir frequently.

4Reduce heat; add chicken with soy sauce and broth.

5Simmer, covered, 20 to 25 minutes or until rice is tender.

6Remove cover the last few minutes.

7Stir in onion, green pepper and celery; cook over medium heat until liquid is absorbed.

8Push rice mixture to sides of skillet.

9Add eggs and cook until almost set; blend into rice.

10Stir in lettuce or Chinese cabbage.

11Serve at once with soy sauce.
