Chicken Fried Rice

  • 4 whole Chicken Thighs
  • Salt And Pepper
  • 4 whole Eggs, Scrambled
  • 1/2 cans (15 Oz. Can) Green Peas
  • 6 whole Green Onions, Chopped
  • 2 cups Rice, More Or Less
  • Soy Sauce, to taste

    Preheat oven to 350°F.

    Start by washing your chicken thighs (and I pulled off the skin) and adding some salt and pepper. Bake them in the oven at 350°F until done.

    When the chicken is finished baking, take all the meat off the bone and set aside.

    Scramble the eggs, using more or less depending on how much you like in your rice. Set aside.

    Set aside the small green peas, drained.

    Cut up some green onions (I like a lot of onions) and set aside.

    And lastly, cook your rice. Again, use however much you do or do not want. I made enough servings for four. And it was plenty!

    Add your ingredients to a skillet, adding the rice last. Mix it all together and voila! You have a simple chicken fried rice dish!

    Add soy sauce to taste. Also, you can add chopped carrots, water chestnuts or anything else you might like!
