Ingredients

  • 2 medium chicken breast (marinated 24 hours in orange juice, salt and pepper)
  • 2 cups of white rice (steamed-undercooked and freeze)
  • 2 tablespoons of sesame oil
  • 2 tablespoons of tomato paste
  • 3 tablespoons of soy sauce
  • 1 small yellow onion (chopped)
  • 1 cup of frozen peas (thawed)
  • 4 fried eggs
  • 2 tablespoons of chives (chopped)

Directions

    Cube the chicken and cook on high heat toss in: oil and onions.

    Add tomato-paste, soy-sauce, combine it well and toss in rice, cook 5 minutes.

    Turn the heat off and add the peas and cover.

    In a skillet, fry 4 sunny-side-up eggs (one per person)
