- 1 lb. chicken breasts
- 1 Tbsp. grated onion
- 1/4 c. cornstarch
- 2 1/2 c. pineapple chunks
- 1/4 c. soy sauce
- 1/2 tsp. ginger
- 1/4 c. margarine
- 2 Tbsp. lemon juice
Directions

1Place chicken in a large bowl.

2Combine soy sauce, onion and ginger.

3Pour over chicken.

4Marinate for at least 1 hour, turning chicken to coat all sides.

5Drain chicken and coat with cornstarch, reserving sauce.

6Place margarine in large baking dish.

7Add chicken, skin side down.

8Bake for 40 minutes (until bottom side is well browned) at 350°.

9Turn chicken over.

10Combine pineapple chunks and liquid, lemon juice and reserved sauce.

11Pour over chicken.

12Bake 30 to 40 minutes more or until tender.
