Ingredients

  • 0.5Kg chicken breast cut in small pieces.
  • freshly ground black pepper.
  • 1 big white onion finely chopped.
  • 1 apple sliced.
  • 2 Ts oil
  • 1/2 cup coconut milk
  • 500 ml chicken broth
  • 1 ts cumin
  • 1 ts coriander seeds
  • 1 ts turmeric
  • 1/4 ts cardamom
  • 1/4 ts cinnamon
  • 1 ts cayenne pepper (depends on your taste)
  • 1 ts ginger powder
  • juice of 1 orange

Directions

    Grind all the spices, with the exception of the black pepper, as much as possible.

    Season chicken with the black pepper.

    Heat the oil in a skillet or wok until it starts to smoke.

    Add the chicken pieces and seal them.

    Remove the chicken from the pan and add the onion.

    Saute the onion until soft and add the apple pieces (peeled).

    cook for another minute and add the spices and chicken back to pan.

    Stir for a minute.

    Add the chicken broth.

    Cook for about 20 minutes

    Add the orange juice and coconut milk and cook until sauce thickens.
