- 9 chicken thighs
- 3 medium onions
- 4 celery stalks
- 5 cloves garlic
- 2 bell peppers
- 1 (4 oz.) can tomato paste
- 1 large can tomatoes
- 1 lb. smoked sausage
- cayenne pepper
- chili powder
- parsley flakes
- Worcestershire sauce
- Tabasco
- salt and pepper
- 3 bay leaves
- 1 c. rice
Directions

1Place chicken and sausage in large pot and cover with water. Boil until tender.

2Drain chicken and sausage, preserving the liquid.

3In a large pot saute chopped onions, pepper, celery and garlic in light olive oil until tender.

4Bone and cut up chicken and sausage.

5Add chicken and sausages to vegetables, also adding tomato and tomato paste.

6Season to taste, cook for 30 to 40 minutes over low heat.

7Add 2 to 2.5 cups reserved liquid and rice.

8Cook until liquid is absorbed.
