- 2 1/2 to 3 lb. boneless chicken breast
- 1 lb. mushrooms, quartered
- 6 oz. jar marinated artichoke hearts, drained
- 2 cloves minced garlic
- 1/2 tsp. dried oregano
- black pepper to taste
- 2 c. chopped tomatoes
- 1/2 c. sherry
Directions

1Preheat oven to 350°.

2In a 13 x 9 x 2-inch pan, place chicken.

3Top with mushrooms and artichoke hearts.

4In a medium mixing bowl, combine garlic, oregano, pepper and tomatoes.

5Pour over chicken.

6Bake for 50 minutes, adding sherry for last 10 minutes of cooking time.
