- 1 c. chopped celery
- 1 c. chopped onion
- 1 c. chopped green pepper
- 2 Tbsp. margarine
- 1 1/2 c. chicken broth or water
- 1 c. uncooked rice
- 1 (16 oz.) can tomatoes
- 2 c. chopped cooked chicken
- cayenne pepper to taste
- salt and pepper to taste
Directions

1Cook celery, onion and green pepper slowly in margarine until soft.

2Add chicken broth or water, uncooked rice, tomatoes (cut up with juice) and chicken.

3Bring to a boil.

4Flavor with spices. Turn down and cook for 40 minutes or until rice is cooked.
