- 3 lb chicken breast
- 1/2 cup lemmon juice
- 6 small hot peppers (optional)
- 1 cup coconut (grated)
- 1 tbsp salt
Directions

1Cut chicken in half and sprinkle with salt.

2Place in a broiler pan or grill over charcoal.

3Broil for 10 minutes.

4Turn chicken over and broil 5 minutes more.

5De-bone and chop or grind chicken.

6Throughly mix chicken with remaining ingredients in a bowl.

7Add more lemon juice and salt to desired taste.

8Chill at least one hour.

9Served on chilled lettuce leaf, corn or flour tortillas.
