- 1 lb. boneless chicken breasts
- 1 inch piece Ginger root
- 2 c. chicken stock
- 1 carrot cut into Julienne strips
- 1 c. thinly sliced celery
- 1/2 onion thinly sliced
- 10 Shiitake mushrooms (soaked and sliced)
- 2 oz. long rice, soaked in warm water for 1 hour
- 3 stalks green onion, cut into 1 inch pieces
Directions

1Soak mushrooms in warm water for 20 minutes, then cut off the stems.
