  • 1 lb. boneless chicken breasts
  • 1 inch piece Ginger root
  • 2 c. chicken stock
  • 1 carrot cut into Julienne strips
  • 1 c. thinly sliced celery
  • 1/2 onion thinly sliced
  • 10 Shiitake mushrooms (soaked and sliced)
  • 2 oz. long rice, soaked in warm water for 1 hour
  • 3 stalks green onion, cut into 1 inch pieces

Directions

    Soak mushrooms in warm water for 20 minutes, then cut off the stems.

    Remove skin from chicken and cube.

    Crush ginger root.
