- 4 lb. chicken
- 2 Tbsp. oil
- 2 cloves garlic, minced
- 3 c. chicken broth
- 2 Tbsp. cornstarch
- 1/4 c. cold water
- 2 pkg. frozen spinach, chopped
- 1 (14 oz.) can coconut milk
Directions

1Cut chicken into serving pieces.

2Heat oil in skillet and brown.

3Stir in garlic and add broth.

4Simmer 1 1/2 hours, until chicken is tender.

5Place in casserole dish and keep warm in oven. Bring broth to a boil and reduce to 2 cups.

6Blend cornstarch and water to make paste; stir into broth and cook.

7Stir frequently until thick.

8Drain spinach and stir spinach and coconut milk into chicken broth.

9Season with salt and pepper to taste.

10Pour over chicken and serve.
