- 1 frying chicken (2 1/2 to 3 lb.), cut into serving pieces
- 1/4 c. flour
- 2 Tbsp. margarine
- 2 Tbsp. oil
- 4 Tbsp. lemon juice
- 1/2 c. orange juice
- 2 Tbsp. honey
- 1/2 Tbsp. low salt shoyu
- 1/2 tsp. powdered ginger
- 1 (11 oz.) can mandarin oranges with juice
Directions

1Wash and dry chicken pieces.

2Shake in a paper bag with flour to coat.

3In a skillet, heat oil and margarine; add chicken and brown each piece.

4Drain mandarin oranges and set aside.

5Mix juice from the can with the lemon juice, orange juice, honey, shoyu and ginger.

6Pour sauce over the chicken in skillet.

7Cover and simmer for 30 minutes or until tender.

8Add mandarin oranges 5 to 10 minutes before chicken is done.

9Serves 4.
