Chicken Marsala

- 3 large chicken breasts, split, boned and skinned
- 4 Tbsp. butter or margarine
- 1 clove garlic, crushed
- 2 c. sliced mushrooms
- 3/4 c. Marsala wine
- 2 Tbsp. chopped parsley
Directions

1In large skillet, heat butter.

2Brown garlic until golden and discard.

3Saute chicken breasts in flavored butter until well browned on all sides.

4Add mushrooms and Marsala.

5Cover and cook 5 to 7 minutes or until chicken is fork-tender.

6Remove chicken breasts to warm platter.

7Over high heat, heat sauce in skillet to boiling, scraping up any brown bits from the bottom of the pan. Cook until sauce thickens slightly.

8Stir in parsley and pour over.

9Makes 6 servings.
