- 2 Tbsp. corn oil
- 2 medium zucchini (about 3/4 lb.), cut in 1/4-inch slices
- 1 tsp. salt
- 1/2 tsp. crushed dried basil leaves
- 1 small onion, sliced
- 2 medium summer squash (about 3/4 lb.), cut in 1/4-inch slices
- 1 bay leaf
- 1/4 tsp. pepper
Directions

1Heat corn oil in skillet over medium heat.

2Add onion; saute, stirring frequently until tender.

3Stir in zucchini, squash, salt, basil leaves, pepper and bay leaf.

4Cover and simmer about 20 minutes or until tender.

5Makes four 3/4-cup servings.
