Chicken Marsala

- 4 boneless chicken breasts
- lemon juice
- salt and pepper
- 1/2 c. flour
- 1 lb. fresh mushrooms, sliced
- 1 large onion, chopped
- 1/2 to 1 c. dry Marsala wine or dry sherry
- butter (for sauteing)
Directions

1Separate chicken breasts into cutlets and sprinkle them with lemon juice, salt and pepper.

2Set aside.

3Saute mushrooms and onion in butter until transparent.

4Remove from pan. Dip chicken in flour and saute in melted butter in same pan on each side until golden brown. Add mushrooms and onion mixture and wine. Cover and simmer over low heat 20 to 30 minutes.

5Serve with wild rice.
