- 4 boneless chicken breasts
- 2 eggs, beaten
- 1 1/2 c. unflavored bread crumbs
- 1/3 c. Parmesan cheese
- 1/4 c. butter
- 2 Tbsp. olive oil
- 1 c. Marsala wine
Directions

1Slice chicken thin.

2Mix bread crumbs and cheese together with salt and pepper to taste.

3Dip sliced chicken into egg mixture, then press into bread crumbs.

4Let set 15 minutes.

5Heat oil and butter mixture until foamy, then add chicken and cook 2 to 3 minutes or until lightly browned.

6Add wine and simmer 15 to 20 minutes.

7Turn occasionally to ensure this won't dry out too much. If needed, add more wine.

8Yields 4 servings.
