Chicken Marsala

  • 4 boneless chicken breasts
  • 1 tsp. pepper
  • 1/2 c. chopped mushrooms
  • 2 Tbsp. flour
  • 3 c. cooked rice
  • 1/2 c. leeks, chopped
  • 1/2 c. Marsala wine
  • 1/2 c. water
  • 1/2 c. flour to coat chicken

Directions

    Coat chicken with flour and cook in vegetable oil until brown. Add leeks, pepper, wine, mushrooms and water.

    Cook on medium heat.

    When the chicken is thoroughly cooked, add flour to thicken.

    Pour over heated rice and serve.

    You can add more wine to flavor, if desired.
