- 4 large split chicken breasts
- 1 (8 oz.) brick monterey jack cheese, grated
- 1 large yellow pepper, sliced
- 1 large red pepper, sliced
- 1 medium onion, sliced
- 1/4 c. butter
Directions

1Melt butter in skillet.

2Brown chicken in butter, remove from skillet and set aside.

3Saute onion and peppers in butter until semi-tender and remove from skillet.

4Return chicken to skillet, add onions and peppers, cover and simmer until chicken is done. Add cheese to skillet, cover and continue to simmer just long enough to melt cheese.

5May be served with Mexican-style rice.
