Chicken Mozzarella

  • 4 chicken breast fillets
  • 20 to 25 saltine crackers, crushed
  • 3/4 c. flour
  • salt and pepper
  • Mrs. Dash seasoning
  • vegetable oil for frying
  • 1 large can or jar spaghetti sauce
  • 1 well beaten egg, watered down
  • sliced Mozzarella cheese
  • 1 small box fettucini noodles

Directions

    Combine crushed crackers, flour, salt, pepper and Mrs.

    Dash (seasonings to taste).

    Dip chicken fillets in egg and coat with cracker mixture.

    Fry chicken in large skillet (approximately 1/3 full of oil) until golden brown.

    Drain on paper towel-covered plate and top with cheese while still hot.

    While chicken is frying, prepare noodles as directed and warm spaghetti sauce. Serve chicken on a bed of noodles topped with spaghetti sauce.
