Chicken Mozzarella

  • 2 whole chicken breasts, skinned and boned
  • 1 egg
  • 1 tsp. water
  • 1 c. Italian seasoned bread crumbs
  • 1/4 c. oil
  • 2 lb. spaghetti sauce
  • 2 small cans (2 oz.) sliced mushrooms (optional)
  • 1 (8 oz.) pkg. shredded Mozzarella cheese
  • 1 (8 oz.) pkg. small shell pasta, cooked

Directions

    Slice chicken into cublets if they're thick.

    Beat egg with water.

    Dip chicken into egg batter, then into bread crumbs. Saute in hot oil in frying pan until golden brown.

    Mix sauce and drained mushrooms.

    Pour a layer of sauce into a greased casserole dish; add chicken and remaining sauce.

    Can be covered and refrigerated at this point, if desired.
