- 1 pound Hot Italian Sausage
- 3 Tablespoons Olive Oil
- 1/2 cups All-purpose Flour
- Salt And Pepper, to taste
- 4 Boneless, Skinless Chicken Breast Halves, Cut Into 1 Inch Cubes
- 3 Medium Baking Potatoes, Peeled And Cubed
- 1 Large Onion, Halved And Sliced
- 1 Red, Yellow, Or Orange Bell Pepper, Stem And Seeds Removed, Sliced Thin
- 1 quart Sliced White Button Mushrooms
- 4 cloves Garlic, Minced (or A Couple Extra If Desired)
- 1 jar (12 Oz. Size) Sliced Hot Cherry Peppers With Brine/juice
- 1 cup Dry White Wine (or Chicken Stock)
- 1 package (12 Oz. Size) Rotini Pasta (Whole Wheat - Use Whatever You Fancy)
- 1/4 cups Freshly Grated Parmesan Cheese

2In a large skillet, heat 1 tablespoon of the oil over medium-high heat.

3Then fry the Italian sausage until cooked through.

4Remove sausage from the skillet.

5Cut links into bite-sized pieces.

6Alternately, remove sausage from casings, and brown as you would with bulk sausage.

7Drain grease and set aside.

9Combine the flour, salt and pepper in a medium bowl.

10Dredge the cubed chicken breasts in the flour to coat.

11Heat an additional tablespoon of olive oil in the skillet if necessary.

12Fry the chicken cubes until browned on the outside.

13Remove chicken from skillet and set aside.

15Meanwhile, place the potatoes in a pasta pot with enough water to cover.

16Add about 1 tablespoon of salt.

17Bring to a boil, and cook until fork tender, but not mushy, about 15 minutes.

18Using a slotted spoon, remove potatoes from the water, allow to drain, and set aside.

19Reserve water and keep heat on medium-low to cook pasta.

21Return the skillet to medium heat and add 1 tablespoon of olive oil if necessary.

22Saute onion, bell pepper, and mushrooms until soft.

23Stir in garlic, and cook for about 1 minutes.

25Add cherry peppers with their brine and the wine or chicken stock to the pan; scrape any browned bits from the bottom, and bring to a simmer.

27Return chicken and sausage to the pan and add the potatoes.

28Simmer over medium-low heat, stirring occasionally, until sauce is thick enough to coat pasta (it will still be somewhat thin, but you will see the starch from the potatoes begin to thicken it a bit).

30While the chicken mixture is simmering, return pot of water to a boil.
