  • 4 chicken breasts
  • flour
  • 2 eggs
  • fresh mushrooms, 1/2 # to 1 #
  • butter
  • lemon juice

    Pound the chicken breasts just a bit.

    Dip in egg, then flour.

    Fry on medium heat in butter.

    When crisp on both sides, remove from pan and place on warm serving platter.

    Add more butter (about one stick) and fresh mushrooms to pan and fry on medium for a few minutes.

    Stir in 3 TB lemon juice and pour the mushroom mixture over the chicken.
