- 2 Tbsp. vegetable oil
- 2 Tbsp. margarine
- 1/2 c. chicken broth
- 1/3 c. fresh lemon juice
- 1/4 c. chopped fresh parsley

1Purchase chicken cutlets, or prepare them yourself by skinning and boning chicken breasts.

2One whole breast yields 2 cutlets. Cutlets must be pounded until thin (approximately 1/4-inch).
