- 2 (3 lb.) chickens
- 28 oz. can Italian tomatoes, chopped
- 1/4 c. olive oil
- 2 garlic cloves
- 1/4 c. parsley
- 1 1/2 tsp. salt
- 3/4 tsp. oregano
- 3/4 tsp. basil
- 1/4 tsp. crushed red pepper
- 1/4 tsp. black pepper
Directions

1Place cut up chicken, skin side up, in a 13 x 9 x 2-inch pan. Slightly drain tomatoes and mix with remaining ingredients.

2Pour over chicken.

3Bake at 375° for 1 hour.

4Turn and sprinkle 1/4 cup Parmesan cheese.

5Bake another 1 hour.
