Chicken Plus Salad

  • 2 whole Chicken Breasts
  • 4 whole Hard Cooked Eggs
  • 1/2 whole Onion
  • 2 stalks Celery
  • 1/2 cups Pecans
  • 1 cup Mayonnaise

Directions

    Poach whole chicken breasts in water. Hard cook the eggs.

    Cool, debone and shred chicken. Cool, peel and chop eggs. Chop onion and celery. Add chopped pecans. Add mayo and stir.

    I serve this on pita bread as a sandwich and on crackers or bagel crisps as an appetizer. It would also be tasty on lettuce leaves.
