- 4 flour tortillas
- 1/2 cup of Cheddar Cheese
- 1/2 cup Monterey Jack Cheese
- 10 oz. Cooked Chicken Breast (small diced)
- 1 medium Tomato (seeded and cubed)
- 4 Green Onion, (chopped)
- Sour Cream
- Salsa
- Guacamole
Directions

1Lay out two tortillas and sprinkle one side with cheeses, chicken, diced tomatoes, green onions and top with the other tortilla.

2In a skillet, heat one tablespoon of oil, place the stacked tortillas.

3Cook for 2-3 minutes on each side or until golden brown and cheese has melted.

4Cut into wedges and serve with sour cream, salsa and guacamole.
