- 3 garlic cloves, minced
- 1/4 cup onion, diced
- 2 tablespoons rice wine vinegar
- 3 tablespoons low sodium soy sauce
- 1/8 cup carrot, diced
- 4 cups chicken broth
Directions

1Heat a medium sized pot on medium-high heat.

2Add vegetable oil and onions. Cook for about 2 minutes until onions begin to soften. Add garlic, stir until fragrant (about 1 minute).

3Add rice wine vinegar and soy sauce; cook for 2-3 minutes.

4Add carrots and chicken broth. Allow the broth to simmer together for at least 5 minutes to allow flavors to combine.
