Chicken Reuben Bake

  • 6 slices Rye Bread, Cubed
  • 1/4 cups Butter, Melted
  • 1 Tablespoon Butter
  • 1/2 cups Onion, Diced
  • 1/2 cups Sour Cream
  • 1/2 cups Thousand Island Dressing
  • 1 can 15 Oz Sauerkraut, Drained
  • 3 whole Chicken Breasts, Cooked And Diced
  • 1 cup Mozzarella Cheese, Shredded
  • 1 cup Swiss Cheese, Shredded

Directions

    Preheat oven to 375F.

    Coat a 9x9 inch baking dish with nonstick spray.

    In a large bowl toss cubed bread and melted butter.

    Mix well and set aside.

    Over medium heat, saute onion with with butter and, once onions are softened remove from heat and mix with sour cream and dressing.

    Layer pan as follows: 1/2 of the bread mixture, then all of the sauerkraut, then the chicken, then the sour cream and onion mixture, Mozzarella cheese, and Swiss cheese.

    Top with the rest of the bread.

    Press down.

    Bake uncovered for 30 minutes.
