Chicken Rice Casserole

  • 1 1/4 c. raw white rice
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 can mushroom soup
  • 1/4 lb. butter or margarine, melted
  • 1/4 c. sherry
  • 4 boned chicken breasts
  • 4 boned chicken thighs
  • 1/2 can French fried onions

Directions

    Moisten rice in melted butter mixed with sherry and some of the soups which have been blended together.

    Put chicken pieces on top of rice mixture and onions on top of that.

    Pour remaining soup over all.

    Sprinkle generously with Parmesan cheese and dust with paprika.

    Bake 1 1/2 to 2 hours at 275°.
