- 6 Tbsp. butter
- 1 lb. chicken breast, cubed
- 1 clove minced garlic
- 1 1/2 c. uncooked rice
- 1 large onion, chopped
- 3 c. chicken broth
- 1 tsp. basil
- 1 c. shredded Cheddar cheese
Directions

1In large skillet, melt 2 tablespoons butter and brown chicken pieces over medium heat.

2Remove chicken from skillet.

3Add remaining butter, rice and garlic to skillet and cook, stirring constantly, until rice is lightly browned, about 5 minutes.

4Add onion; continue cooking, stirring occasionally, about 2 minutes. Stir in chicken broth and basil.

5Bring to a boil, cover and simmer about 15 minutes.

6Gently stir in chicken and simmer until chicken is heated through and rice is tender, about 5 minutes. Top with cheese and serve.
