- 1 (3 lb.) chicken, cooked, boned and cut in bite size pieces
- 2 (5 oz.) pkg. medium egg noodles
- 1 lb. Velveeta cheese
- 1 large onion, diced
- 1 green pepper, chopped (optional)
- 1 stick oleo
- 1 can mushrooms (stems and pieces)
- 1 can Ro-Tel tomatoes
- 1 can small English peas, drained
Directions

1Saute onion and pepper in 1 stick oleo; add broth and tomatoes. Cook for 10 minutes.

2Stir and break up tomatoes.

3Add diced cheese, peas and chicken.

4Cook until cheese is melted.

5Cook noodles in chicken broth.

6Mix noodles and sauce.

7Place in large baking dish; bake in 350° oven until bubbly.
