- 2 c. diced Chicken
- 1 c. chopped Celery
- 2 hard boiled Eggs
- 1 Tbsp. Onion
- 1 Tbsp. Relish
- 1/4 c. Mayonnaise
- 1/2 tsp. White Pepper
- 4 medium Tomatoes
- 1 small head shredded Lettuce
- Salt to taste
Directions

1Cook diced Chicken until tender, let cool for 1 hour.

2Combine Chicken, Celery, Eggs, Onion, Relish, Mayonnaise, Salt and Pepper. Toss together.

3Cut the tops off the Tomatoes, scoop out a portion of the pulp and discard; fill each tomato with a portion of the Chicken Salad and put each Tomato on a portion of the shredded Lettuce.

4Chill for 1/2 hour in the refrigerator before serving.
