Chicken Salad

Ingredients

  • 2 c. diced Chicken
  • 1 c. chopped Celery
  • 2 hard boiled Eggs
  • 1 Tbsp. Onion
  • 1 Tbsp. Relish
  • 1/4 c. Mayonnaise
  • 1/2 tsp. White Pepper
  • 4 medium Tomatoes
  • 1 small head shredded Lettuce
  • Salt to taste

Directions

    Cook diced Chicken until tender, let cool for 1 hour.

    Combine Chicken, Celery, Eggs, Onion, Relish, Mayonnaise, Salt and Pepper. Toss together.

    Cut the tops off the Tomatoes, scoop out a portion of the pulp and discard; fill each tomato with a portion of the Chicken Salad and put each Tomato on a portion of the shredded Lettuce.

    Chill for 1/2 hour in the refrigerator before serving.
