  • 12 chicken breast tenders (about 1 1/2 pounds)
  • 3 tablespoons fresh lime juice
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons fish sauce
  • 2 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon canola oil
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons fresh lime juice
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon honey
  • 1 teaspoon grated peeled fresh ginger
  • 1 garlic clove, minced
  • Cooking spray

    Soak 12 (6-inch) wooden skewers in water 30 minutes.

    . While skewers soak, combine first 7 ingredients in a large zip-top plastic bag; seal and gently shake bag to coat chicken. Marinate in refrigerator 15 minutes.

    . Combine soy sauce and next 5 ingredients, stirring with a whisk.

    . Remove chicken from bag; discard marinade. Thread each chicken tender onto a skewer. Place chicken on grill rack coated with cooking spray. Cover and grill 3 minutes on each side or until done. Serve chicken with peanut sauce.
