- 1 chicken tenderloins - bamboo skewers
- 1 can coconut cream
- 250 grams peanut butter
- 2 1/2 tsp hot chilli paste
- 2 tsp chopped ginger
- 1/2 lemon - juice
- 2 cup rice
- 1 honey
Directions

1Soak bamboo skewers in hot water for half an hour (at least)

2Add peanut butter, chilli, ginger, lemon juice and coconut cream to a pan and mix together and heat without boiling

3Thread chicken tenderloin onto soaked skewers

4Warm a little honey and baste chicken skewers

5Place under grill OR cook in griddle pan until browned all over

6Cook rice
-
7Place skewers on rice pour hot satay sauce over reserving some sauce to add to a small dish as a dipping sauce
