Chicken Sopa

Ingredients

  • 1 large cut up fryer
  • 1 doz. corn tortillas
  • 1/2 stick oleo
  • 1 (4 oz.) can green chilies, chopped
  • 1 lb. grated Monterey Jack cheese
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can sliced water chestnuts (can be omitted)
  • 1 small onion, chopped

Directions

    Boil chicken until tender.

    Remove from bones, reserve broth. Melt oleo, add chilies and onion and cook until tender.

    Add chicken, soups, chestnuts and one soup can of chicken broth.

    Tear tortillas into eighths.

    Layer in greased casserole tortillas, chicken mixture and cheese.

    Repeat at least 3 layers.

    Bake 1 hour at 350°.
